Manami is Japanese for “beauty, sea” or “love, sea.” It is our daughter’s name, after whom we named our small, mountainside coffee farm in Holualoa. Two rivers flank our farm, overflowing with heavy rains into the coffee fields, remineralizing the soil. Our coffee trees are healthy and mature, ethically grown and harvested.
 
A tip roast is slightly darker than your average medium/dark. It is monitored closely during the roasting process and stopped at the critical moment when the coffee oils have begun to emerge on the surface of the bean before becoming too dark.
